After it is harvested, it is disinfected, cleaned, dried, classified, calibrated and packed for export. The whole process is carried out under an adequate quality and sanitary control.

Commercial description: It belongs to the Amaranthus Caudatus species. It is a very small round grain which rarely reaches 1 mm diameter, presenting different colors that range from black through red and ivory & white. Rich in calcium, phosphorus, iron, potassium, vitamin E and vitamin B complex as well as essential amino acids for the development of human body tissues. It is produced in the Andean region of Peru, Ecuador and Bolivia Known as the food of the Incas, it has been cultivated for more than 4,000 years. After it is harvested, it is disinfected, cleaned and classified and packed for export. The whole process is carried out under an adequate quality and sanitary control.

Kiwicha

Commercial description: It belongs to the species Lens Culinaris. The lentil is a close relative to the bean, and both are a part of the legume family. Lentils have the silhouette close to that of a lens. In fact, lens is the Latin word for lentil. Lentils can vary on shape and size depending on its genetic variety. The outer seed coat can be mottled or speckled, and ranges in color from reddish-brown to grayish-brown to green.  Rich in proteins, carbohydrates, fiber, minerals and vitamins, identified as the main existing vegetable source for iron. Once harvested, it is cleaned, calibrated and packed for export. The whole process is carried out under an adequate quality and sanitary control.

Technical specifications: Available in different varieties and different sizes (sizes: 11/13, 13/16, or 20 beans per ounce). Lentils can also be screened to fit customer’s special sizing requirements Machined-classified, free from impurities, live or dead insects. Grades traded are either USDA # 2 or USDA # 1.

Lentils

Commercial description: It belongs to the Zea Mays L species. It is a white, large grain, with circular flan shape and floury soft texture. Rich in proteins, starches and sugars. It is produced in the Sacred Valley of the Incas in Urubamba, Cusco Peru. After it is harvested, it is disinfected and then classified, calibrated and packed for export. The whole process is carried out under an adequate quality and sanitary control.

Technical specifications: diameter 24/27- 28/32 kernels per ounce. 100% machine and manual selection, free from impurities, live and dead insects.

Main Producing Countries/Areas: Peru.

Commercial description: Known with many different local names in each country, popcorn can be divided into two main varieties:  butterfly and mushroom. The butterfly type is large and fluffy-like with at least 2 “wings” projecting from each grain, thus its butterfly name (picture above). This can be considered the most common type of popcorn on the market, and it usually expands much larger. The mushroom type on the other hand is more compressed and it pops with a round shape (picture below). This is the type of grain that, due to its characteristics, works beautifully with industrial processes such as coatings: sweets (think delicious caramel popcorn!), salty, cheese, etc!

What makes the popcorn pop? Each seed or kernel of popcorn contains a certain amount of moisture and oil. The outer shell works as a protective shield preventing more moisture to penetrate. When the oil and water pass the boiling point mark, they become a pressurized steam. The pressure continues to increase until it breaks the outer shell and popcorn is popped!

Technical specifications: The most common technical specifications for popcorn are: moisture content, expansion rate and the kernel size. Out of those 3 the most basic is the expansion rate, which can start in 38-40:1 all the way to 46-48:1. We are able to supply you with any specification you may desire.

Commercial description: It belongs to the Pisum Sativum species. It is a yellow rounded bean rich in proteins, carbohydrates and minerals. Once harvested, it is disinfected and then classified, calibrated and packed for export. The whole process is carried out under an adequate quality and sanitary control. Both split (picture above) and whole (picture below) are the same, the difference being the mechanical process to separate the natural split of the bean’s cotyledon, to encourage faster cooking.

Technical specifications: diameter standard. 100% machine and manual selection, free from impurities, live and dead insects. Different varieties with their own variety name. They can be whole for canning purposes and splitted. Grades either USDA No. 1 or USDA No.
